Ingredients

  • 2 lb brussels sprouts uncooked
  • 3 tbsp avocado oil
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 5 oz bacon uncooked

Instructions

  1. Preheat oven to 400 degrees

  2. As oven is preheating, line a large baking sheet with aluminum foil

  3. Thoroughly wash the brussels sprouts in a colander and pat dry

  4. Cut off the sprout ends and slice in half

  5. Spread halved sprouts in a single layer on the lined baking sheet

  6. Drizzle with extra virgin olive or avocado oil

  7. Using a spatula, mix sprouts around on the baking sheet until evenly coated

  8. Sprinkle with kosher salt and black pepper

  9. Using a spatula again, mix sprouts around on the baking sheet until evenly coated with the salt and pepper

  10. Cut bacon strips into small rectangular pieces and evenly distribute them among the pan of prepared brussels sprouts

  11. Roast brussels sprouts and bacon in the oven for 10-15 minutes

  12. Remove the pan from the oven, flip the sprouts using a spatula to ensure they are evenly cooked

  13. Roast for an additional 10 minutes until sprouts have softened to desired texture
