Ingredients

Green Chili Chicken Enchilada Casserole

  • 2 tbsp avocado oil
  • 1 cup onion diced
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 16 oz cauliflower rice uncooked
  • 15 oz canned corn drained, rinsed
  • 15 oz canned black beans drained, rinsed
  • 4 oz diced green chiles
  • 2 cups shredded Mexican style cheese
  • 2 pounds chicken breasts cooked, shredded
  • 2 avocados sliced, optional topping

Instructions

  1. Preheat oven to 350 Degrees

  2. Heat 2 tbsp of avocado oil (or extra virgin olive oil) in a large skillet

  3. Dice a medium onion (about 1 cup) and add to the heated skillet

  4. Sprinkle with sea salt and black pepper

  5. Once onions have softened, add cauliflower rice and sauté for 6-8 minutes until soft

  6. In a large bowl, combine corn, black beans, green chilis, 1 cup Mexican style shredded cheese, and the all of the green chili shredded chicken

  7. Slowly add in the onion and cauliflower rice into the large bowl, and mix all ingredients together

  8. Season with additional sea salt and black pepper and mix well

  9. Coat a 13x9 baking dish with oil or cooking spray

  10. Pour entire bowl of mixed ingredients into the baking dish

  11. Top with remaining shredded cheese until evenly covered

  12. Bake in the oven for 20-25 minutes until cheese is melted and bubbly

  13. Top with dollop of sour cream, sliced avocado, and chopped cilantro (optional)
